I've been making this snack in the morning to take to work. It's a very yummy and healthy way of getting in some dairy and fruit. I'm trying to eating 4 serves of fruit a day as recommended for pregnant women in the Australian Guide to Healthy Eating. I got this idea from Jelte Gillian, the cook who has done some cooking classes and demonstrations at Diabetes TASMANIA. I started out adding a little sugar because I thought I needed it with plain yoghurt but with the juice coming out of the grated apple it's not needed at all.
1 granny smith apple, grated
a few good spoons of low fat plain yoghurt (I used Tamar Valley Lite)
cinnamon - about 1/4 -1/2 teaspoon
Optional - mixed spice
It has my vote for favourite snack of the week!
